
Lemon Mousse | Zitronenspeise

This German lemon mousse is decadently rich, sweet, and tangy. For this easy recipe, you don't even need gelatin!

0 In a medium bowl, combine lemon juice and sugar. 1 Pour most of this mixture into a small saucepan but keep about 3 TBSP back. To this add the cornstarch and mix well. 2 Gently bring the lemon-sugar mixture to a boil. 3 Take the lemon mixture off the heat, whisk in the cornstarch slurry, and return to low heat. 4 Constantly whisking, bring the mixture back to a soft boil until it thickens. Let it cool slightly. 5 Whisk in the yogurt. Transfer the mixture to the refrigerator until cool to the touch. 6 Whip the heavy cream until very stiff. Remove the lemon-yogurt mixture from the fridge and carefully fold in the whipped cream. 7 Transfer the lemon mousse to 4 individual serving bowl and keep refrigerated until ready to serve.
