This humble dish may not look like much but trust me it is the most delicious light meal full of flavors.

Over low heat, boil the potatoes until done. Peel once they are cool enough to touch.
In a medium bowl, mix the quark cheese with the herbs. Season with salt and pepper to taste.
To serve, scoop some quark onto a plate, add potatoes, and drizzle liberally with flaxseed oil.
