Homemade Ketchup

Make your own ketchup that is more flavorful and healthier than what you can buy in the store.
In a medium sauce pan, heat the oil. Add the onion and sautee until translucent. Add the garlic and cook for 1 min.
Add the tomato paste, spices, and water. Mix well and cook for a few minutes until thickened.
Add vinegar and sugar to taste.
Fill into clean jars. Keep tightly covered in the refrigerator for up to 2 months.
